Breakfast bun time!! The stuffing is made from scrambled eggs, ham and dairy free cheese. The cheese melts during the baking of the buns. This is also a very simple and tasty recipe.
You can let the dough rise each time for 1 – 2 hours. The longer you let it rise, the fluffier it will be.
I continued to add more Xanthan Gum even though the flour already had it in it.
Equipment:
Baking sheet
Parchment paper
Large mixing bowl or stand up mixer
Plastic wrap
Wire rack
Small bowl for water
Small bowl for egg mixture
Ingredients:
2 3/4 cups of Pamela’s Bread Mix gluten free flour
1 teaspoon of Xanthan gum (I put it in anyways)
1/4 cup of warm water (between 100-110 degrees)
1 packet of yeast (2 1/4 teaspoon)
2 tablespoon of sugar (not fake sugar)
3/4 teaspoon of salt
1 cup of warmed dairy free milk (between 100-110 degrees)
1 egg
2 tablespoon of dairy free butter
Insides:
3 eggs scrambled
3 pieces of ham, cut up
Dairy free cheese, cut up (your choice of flavor and amount)
Egg wash:
1 egg
1 tablespoon water
Directions:
- Use a large baking sheet. Line it with parchment paper.
- Combine the warm water (100 – 110 degrees) with the yeast and let sit in the stand mixer bowl for 5 minutes.
- Whisk the flour, sugar, xanthan gum, and salt in a large mixing bowl for about 1 minute to combine the dry ingredients.
- Add the flour mixture to the yeast mixture in the stand mixer bowl. Add the warm milk, egg and butter and then mix on medium speed for about 3 minutes until the dough is smooth using the paddle attachment for the stand mixer.
- Pour a little flour on a flat surface. Using the 1/3 cup, scoop out about 8 equal size dough balls. It helps to flour your hands as well and use a small spatula. Place the 8 or so dough balls on the baking sheet.
- Seal the baking sheet with plastic wrap and let sit in a warm place for 1 -2 hours. This should allow the dough to rise.
- Roll out each dough ball flat. Add an equal heaping amount of the egg/ham/cheese mix in the center of each dough ball. Pull up the sides making a pouch and seal it tight. Place each ball back on the baking sheet with the smooth side up. Do this to all of the dough balls.
- Pour some water in a small bowl. Wet your fingers and smooth out the tops of the dough balls. This will help make a smooth top on your dinner rolls.
- Reseal the baking sheet with plastic wrap and let sit in a warm place for another 1 hour. This should allow the dough to rise again.
- Preheat the oven to 350 degrees F.
- Combine the egg and water beating it for a minute. Brush the liquid onto the top and sides of the dough balls.
- Put the pan into the oven and bake for 25 -30 minutes. Check after 25 minutes and continue to bake more if needed until the tops are brown. Check by inserting a toothpick. If it comes out gooey, then bake another 5 minutes until an inserted toothpick comes out clean.
- Allow the rolls to cool for 5 minutes on a wire rack.
